Fukuoka, the capital of Tonkotsu Ramen. With shops around every corner, deciding which ones to check out during your trip can be a real challenge.

🍜 Fukuchan Ramen 🍜

Full Review: Fukuchan Ramen

A local legend in Fukuoka, Fukuchan hits all the right spots in a good bowl of Tonkotsu Ramen.

Featuring a collagen-rich pork bone broth with a touch of aged ‘funk’, slightly thicker Hakata-style noodles, and plenty of free toppings, Fukuchan’s ramen is incredibly old-school and rustic, yet masterfully refined to eliminate any off-flavors from a lower-quality, gamey tonkotsu.

Definitely something that’ll keep you hooked and coming back for more!

Fukuchan is located around a 30-minute train ride from Fukuoka’s main city area. While it is quite the journey, the quality and local atmosphere make it a must-visit for any ramen fan!

One-Sentence Summary: It’s the textbook Hakata Tonkotsu experience done absolutely well.

Full Review: Ganso Akanoren Setchan Ramen

Akanoren earns its 2nd place spot on this list not only for its flavor profile, but also for its incredible value for money

Featuring a more shoyu-leaning broth compared to the other entries on this list, Akanoren  manages to capture all the great notes of a good tonkotsu without too much of the ‘funk’ for a clean, balanced flavor profile.

At only ¥580, their Tonkotsu Ramen is one of the cheapest bowls in the city. And if you want an even larger meal, their ¥780 Ramen Set Meal – featuring Tonkotsu Ramen, Chahan fried rice, and Gyoza – is an insanely great deal!

One-Sentence Summary: A solid bowl of Tonkotsu that’s beyond worth its value-for-money.

Full Review: Mohikan Ramen

Specializing in Kurume Ramen, the ancestor of Tonkotsu Ramen, Mohikan offers up an intensely aromatic experience while being surprisingly balanced in flavor profile.

Using much less oil than many other stores, the broth takes on a very ‘smooth’ profile contrary to the aggressively strong aroma.

A front-and-center pork bone flavor with a distinct salty kick alongside the richness of collagen and pork bone – but ultimately a balanced bowl that doesn’t lean too heavily in one direction.

The intensity makes Mohikan the most intermediate-level bowl on this list, but if you’re already a fan of Tonkotsu and want to start venturing into stronger territory, this is the place to visit.

One Sentence Summary: An intermediate-level bowl that’s aggressive on the ‘funk’, but ultimately a balanced and smooth experience.

Full Review: Hakata Issou Ramen

One of the more popular Tonkotsu Ramen stores in recent years, Hakata Issou is best known for their “Tonkotsu Cappuccino” – a rich, aerated broth that gives the typically-heavy tonkotsu a light, foamy finish.

Flavor-wise, Hakata Issou’s broth is very full-bodied.

Prepared by simmering pork bones in a continuous raging boil until it naturally aerates and emulsifies, you get all the richness and saltiness of a good tonkotsu while eliminating most of the “off-notes” for a well-rounded, surprisingly light experience that doesn’t leave you feeling too heavy afterwards. 

Queue times can be notoriously long here, often stretching past the entire block. But if you’re willing to brave the wait, you’ll be treated to one of the most unique bowls of ramen in the city.

One-Sentence Summary: A full-bodied Tonkotsu that’s deep in flavor and aroma, but deceptively light on the tongue.

Full Review: Ichiran (Tenjin Store)

Wrapping up this list with a classic: Fukuoka’s most famous tonkotsu shop – Ichiran.

With stores located all across the city, Ichiran’s Classic Tonkotsu Ramen remains one of the most approachable tonkotsu ramen spots in Fukuoka not only for ease of access, but on flavor as well.

Featuring a full-bodied tonkotsu broth that eliminates most (if not all) of the stronger ‘funk’ some may find too overpowering, alongside some satisfyingly firm noodles and the slight kick from their chili sauce, Ichiran offers a consistently satisfying experience no matter which branch you visit.

Top that off with their simple ‘no interactiondining experience, and an ordering sheet to customize your bowl of ramen (broth strength, noodle firmness, and more), and you have a place that’s my go-to for anyone looking to start out their Tonkotsu Ramen journey!
